Yes it can. I just did a demo last night of color tracking using Processing 1.1. There weren't any mobile developers there so I didn't cover the wickedness at http://android.processing.org/
check out my tutorial on processing from last night http://log.ardevmob.com/ar-beyond-mar... you can learn processing in minutes if you have any java background. I think processing sketch to android app is the most promising quick and dirty "wow" that I've seen -
